Broccoli Slaw

Great salad, unusual and everyone love it (even my dad who hates broccoli)

large head of broccoli, chop florets fairly small (I usualy uses the stalks in a soup)
large red onion, small dice
tin water chestnuts, drained and sliced
pine nuts (toasted)
bacon, crispy fried and chopped - not too small (I usually do loads and add fat to dressing for flavour)
sultanas, couple of big handfuls
celery (optional - I hate it so don't use)

Dressing
Mayo
White wine vinegar
sugar

Mix all the ingredient is a BIG bowl (always makes more than I think but never any left).

Mix lots of mayo with enough vinegar to make a double cream (or slightly thicker) consistency and sugar to taste. This should be tangy and sweet.  Stir into other ingredients about half and hour before serving to really soak in and give a good stir just as serving. Keeps well in the fridge for a couple of days but don't serve too cold.
