Best recipes for surplus cockerels

Any favourites folks?  We've got a few we need to dispose of as tastily as possible  ;D

Hi,not an old recipe but I like to finnish my birds with marriages cockerel fatteners,I think the really improve the flavor of the bird,I have also found they tend to put on meat rather than fat as they do when feed on corn.

This is my "take" on preparing and cooking dual purpose birds

Once they are poached the meat can be used in any "chicken" type dish, ie curry, chicken fricasse,  chicken paprika etc etc.

This is Nigella's Praised Chicken recipe and makes a really good alternative to coq au vin.  Mothers' recipes always seem to outlast fancy fads.

A variation on coq au vin which I tried to good success is a coq au cidre - I used 50/50 dry cider and chicken stock. Long, low and slow is the key to a tender bird  ;D :innocent:

Ooh that sounds good! I might try that with one of mine... going to do the deed with three sometime this week and will cook all in different ways.
Old and rare breed Ducks, chickens, geese, sheep, guinea pigs, 3 dogs, 3 cats, husband and chicks brooding in the tv cabinate!

You could try Coq au vin but the dish is best if the coq has 3 years of leg work under him. ;D
