I know it's probably the worst time of year to dig up fruit trees but I was offered 10 trees, a mix of apple, cherry and plum. They were being cut down and binned by a non gardener who is installing plastic grass!!!,  so I thought it was worth it. They range from 4 - 8 cms diameter.
I have dug up the trees and planted most of them into builders truggs with drainage holes drilled, the two largest planted into made up containers from pallets.
The trees have been well watered but leaves are still wilting.

What should I do : remove all fruit, remove some of the foliage?

Suggestions please.

I would remove the fruit and keep it watered. Hopefully should be fine. They might loose some leaves but should sprout back hopefully

I'd do the same.
If you lost a lot of root system, I'd trim branches down to balance water demand, but bear in mind the leaves are also the energy source for recovery.

Can you find a cool shadylace corner for them? And out of drying wind?

I have removed fruit and shortened some branches, recent cooler weather and rain has certainly helped, all trees looking much better, thanks for the advice.

My bare root trees from suttons clearance which arrived in mid May have all survived and are showing leaves and some blossom... you'll probably be fine

Are you nipping the blossom off?
No blossom on mine.

I figured i'd leave the blossom for the bees and just remove any fruit when it starts to form - except for the Mirrabelle which should be able to fruit in its first year
