So if one was interested in buying and selling say a field or small woodland or an allotment. Where would they go?

Don't think you can buy allotments, only rent them from the council.

As for land, try an agricultural estate agent.

I sometimes see land for sale on Zoopla - there is also an auction site called auctionhouse-london.co.uk that sometimes has land for sale.
Sometimes its building plots but not always.

Most areas of the country have a go-to estate agent or two for rural properties (e.g. in Scotland CKD Galbraith and Bell Ingram are the most common). Whereabouts are you hoping to move to though?

Having been through the process recently my suggestion is to use the aggregator sites like Right Move or Zoopla and filter for what you are looking for.

Use that mainly to find agents in the right area or who deal in rural properties and then contact the agents directly with your requirements. They will often call or arrange viewing before it goes out more widely.

You can also Google - "land for sale UK" or "Woodlands for sale uk"
Auctions are also a good place to buy - although expect to pay way above the "guide" price, as they are deliberately priced low to get interest. I have just paid 4x the guide price for a small piece of land at auction. But it was well worth it for what I want.
Google "Future auctions" to get the details of those being held in your area.
